This is a quick and easy side dish that really lets sweet summer squash shine!
Ingredients
- 2 tablespoons butter
- 1 Large Zucchini
- 1 Large Yellow Squash
- 1 Small Onion (chopped)
- 1 teaspoon garlic (minced)
- 1/2 cup heavy cream
- shredded cheddar cheese (to taste)
- salt and pepper (to taste)
- parmesan cheese (to taste)
Directions
Step 1

Preheat your oven to 450 degrees. |
Step 2

Saute garlic and onion in butter in a large saucepan, until onions are translucent. |
Step 3

Add sliced zucchini and yellow squash. Cook until starting to soften, then add heavy cream, salt, pepper, and parmesan cheese. Cook until bubbly. |
Step 4

Transfer contents to an oven-safe dish. Sprinkle with a bit more parmesan cheese and the shredded cheddar. |
Step 5

Bake 10-15 minutes until mixture is bubbly and cheese is golden brown. |
