Bourbon Peach Upside Down Cake

Ingredients
- 4 Large Peaches (peeled and sliced into wedges)
- 1/4lb butter
- 1 1/2 cup all-purpose flour
- 1 cup milk
- 1/4 teaspoon salt
- 1 teaspoon baking powder
- 1 1/2 cup sugar
- 3 tablespoons bourbon
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon baking soda
Directions
Step 1 | |
Preheat oven to 350 degrees. | |

Place 3/4 cup sugar and bourbon in a sauce pan. Cook over medium heat until sugar caramelizes, approximately 4 minutes. | |

Pour into 10" springform pan or deep dish pie dish and swirl so the caramel covers the entire bottom of the dish. | |

Layer peach slices side by side in circles covering the entire bottom of the pan. | |
Step 5 | |
Cream together butter and sugar. Add egg and vanilla. Gradually mix in flour, baking soda, salt, and baking powder alternately with milk while mixing slowly to incorporate all ingredients. Pour batter over peaches. | |
Step 6 | |
Bake for 45 minutes in oven at 350 degrees until cake is browned and toothpick comes out clean. Remove from oven and rest for 10 minutes before placing a plate over the top of the cake pan and inverting onto the plate. |
Would a bundt pan work for this recipe and if so, what would baking time be? Thank you.
I would think so? I’d estimate roughly the same amount of time – the batter would probably be thicker making me think it’d take longer, but the hole in the middle would allow it to cook maybe a little more quickly since the heat would come from all sides. If it were me, I’d set my oven timer for 30 minutes and then watch it closely from there! Good luck!
