Crockpot Pumpkin Bread Pudding

Ingredients

  • 8 medium slices bread
  • 2 cups whole milk
  • 4 eggs
  • 1/4 cup sugar
  • 1/4 cup pumpkin pie filling (or 1 c. fresh pumpkin)
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup water
  • 3/4 cups sugar
  • 1 tablespoon vanilla

Optional

  • 1/4 cup raisins

Directions

Step 1
Place bread in greased crockpot.
Step 2
Beat eggs and milk. Stir in 1/4 c. sugar, melted butter, raisins, pumpkin, and spices.
Step 3
Pour over bread and stir; cover.
Step 4
Cook on high 1 hour.
Step 5
Reduce heat to low and cook for another 3-4 hours.
Step 6
Make sauce by combining 2 T. butter, flour, water, 3/4 c. sugar, and vanilla just before bread pudding is done.
Step 7
Pour over hot bread pudding and continue to cook about 15-30 min. Serve warm with ice cream or whipped cream.
