5 Fresh peaches (peeled, pitted, and cut into cubes)
1 packet Bacon
1/2 cup Brown Sugar
3 teaspoons Cinnamon
1/2 cup All-Purpose Flour
1/2 cup Whole Milk
1 teaspoon Cinnamon
1 pinch Cloves
1/4 teaspoon salt
1 stick cold butter (cut into pieces)
Directions
Step 1
Grease 9x13 pan w/ butter.
Step 2
Tear bread into chunks (or cut into cubes) and place evenly in the pan.
Step 3
Spread peach cubes over bread.
Step 4
In a separate bowl, mix eggs, milk, sugar, and extracts together. Pour over bread. Cover and refrigerate overnight, or for at least one hour.
Step 5
In a separate bowl, mix flour, brown sugar, cinnamon, and salt. Add nutmeg, if desired. Cut in butter pieces until mixture resembles fine pebbles. Store in a sealed container until ready to bake casserole.
Step 6
Remove casserole from refrigerator 30 minutes before baking. Preheat oven to 350.
Step 7
Cook bacon according to package directions. Remove from pan and cut into pieces. Drain fat from pan. Add brown sugar and cinnamon to pan, cooking until liquefied, stirring often. Add bacon pieces and stir until coated. Set bacon pieces onto wax paper to harden. Break apart when cool and add to topping mixture.
Step 8
Before baking casserole, sprinkle topping evenly over the top.
Step 9
Bake for 45 minutes for a softer, more bread pudding-like texture. Bake one hour or more for a firm, less liquid texture.
